Belgian Waffles with Bourbon Maple Syrup

We hope everyone had a nice Fourth of July! We enjoyed these waffled during our holiday weekend. We absolutely love them! These waffles are easy to make and easy to cook! I use the Breville Waffle Maker It is amazing! But any waffle maker will work. Feel free to make your waffles as light or as dark as possible. I like them on the lighter side! Light and fluffy!

Belgian Waffles

Start by preheating your waffle iron according to the manufactures instructions. If using the Breville waffle maker, I set mine to Belgian style. Then mix your dry ingredients in a large bowl. Set aside and mix your wet ingredients. Combine the wet with the dry ingredients, lightly incorporating. Spray your waffle iron with a little bit of cooking spray to avoid the waffles sticking. Cook according to the box instructions.

To make the syrup, toast pecans in a small skillet for just a minute or two. Add syrup to a small pot with the bourbon. Simmer just enough to just burn off some of the bourbon. Add the pecans, then top the waffles with the syrup. Top the waffles with any fruit of choice.

Belgian Waffles with Bourbon Maple Syrup
Ingredients
  • For the Waffles:
  • 2 cups whole wheat flour
  • 1½ cup almond milk
  • ¼ cup coconut oil, melted
  • 2 tablespoons cane sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • For the Syrup:
  • 1 cup pure maple syrup
  • 1 tablespoon of bourbon
  • ⅛-1/4 cup pecans, toasted
Instructions
  1. Preheat your waffle iron according to the manufactures instructions.
  2. In a large bowl, whisk together all dry ingredients.
  3. In a small bowl, whisk together coconut oil, almond milk and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spray waffle iron with a little bit of cooking spray and scoop in the batter.
  6. In a small pot, add maple syrup and bourbon. Let simmer for a few minutes to burn off the alcohol.
  7. Toast pecans in a small skillet for a minute or two.
  8. Serve waffles immediately with syrup and fresh fruit.
