Sweet Potato Huevos Rancheros Tacos
Ingredients
  • 3 medium sweet potatoes, cubed
  • 1 tablespoon olive oil
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cumin
  • 6 eggs
  • 1 avocado, sliced
  • 1 cup black beans, warmed
  • 1 jalapeno, sliced
  • ½ cup cheddar cheese, shredded
  • 1 lime
  • Handful of cilantro, chopped
  • Salt and pepper
  • 6 taco shells
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine sweet potato with olive oil, cayenne pepper, cumin and a pinch of salt and pepper. Mix well to coat the sweet potato.
  3. Transfer to a baking sheet lined with parchment paper and roast for 25 minutes until golden brown.
  4. Fry up your eggs to your liking. Sprinkle with a pinch of salt and pepper.
  5. Assemble tacos with sweet potatoes, black beans and avocado.
  6. Add an egg to each taco and sprinkle on jalapeƱos, cheddar cheese and a squeeze of lime.
  7. Garnish with cilantro and serve immediately.
