These margarita inspired mimosas make the perfect holiday cocktail. I wanted to create something a bit sweeter than your traditional ‘rita’ or mimosa! And….we always have some variety of tequila on hand. They are so delicious and even perfect for a Sunday morning brunch. With pancakes, of course! These drinks will be a holiday hit at your parties this summer.
Start by making the watermelon juice. Add 2-3 cups of chopped watermelon to a blender and blend until smooth. Strain the watermelon juice to remove any natural fibers that come from the watermelon. Add the juice to a pitcher or mason jar. Mix in the tequila, triple sec and lime juice and stir. You can make this ahead of time and store in the fridge to keep cold.
Fill a champagne glass half way with the watermelon mixture and top the rest off with your favorite champagne. Enjoy outdoors!
- 1 cup of watermelon juice
- 1 cup tequila, Blanco
- ⅛ cup triple sec
- Juice of 1 lime
- 1 bottle of champagne
- Add 2-3 cups of diced watermelon in a blender and blend until smooth. Strain watermelon juice and add to a pitcher. Mix in tequila, triple sec, and the juice of one lime and stir.
- Fill a champagne glass half way with melon mixture and the rest with champagne.
