When I think of stuffing, I think of Thanksgiving dinner! That bread stuffing that we all love! Well…this stuffing is a bit different! These Orzo Stuffed Peppers are just perfect this time of the year. Backyard summer BBQ’s and stuffed peppers!!
When making stuffed peppers, it’s fun to use different types of peppers. I used poblano peppers, which are usually pretty mild, for the most part. However, you may get a few spicy ones from time to time. I also used a variety of other spicy peppers. Bell peppers are a great alternative, which are often used when stuffing peppers.
Start by slicing the peppers down the middle, long ways. Clean and wash the insides. Place on a backing sheet and drizzle with olive oil, salt and pepper. Bake at 400 degrees for 15 minutes. The peppers will begin to brown on the edges and become slightly tender.
In the mean time, combine the orzo with black beans, red onion, avocado, feta cheese, parsley or cilantro, and olive oil. Season with salt and pepper to taste.
Once the peppers are done in the oven, stuff each one with the orzo mixture. Return to the oven and cook for an additional 8 minutes. The orzo stuffing will become warm.
Serve with greek yogurt, sour cream or some salsa and enjoy warm!
- 4 poblano peppers, or mixed variety
- 1 cup cooked orzo
- 1 jalapeno, finely chopped
- ½ avocado, diced
- ½ cup black beans
- ¼ cup red onion, finely chopped
- ¼-1/2 cup feta cheese
- 2 tablespoons olive oil
- 1 tablespoon parsley or cilantro, chopped
- Salt & pepper to taste
- Preheat the oven 400 degrees.
- Slice peppers in half long ways, clean by removing seeds.
- Place on a baking sheet and drizzle with one tablespoon of olive oil and a pinch of salt and pepper. Bake for 15 minutes.
- While the peppers are cooking, combine cooked orzo, jalapeno, avocado, black beans, red onion, feta cheese, parsley or cilantro and olive oil in a bowl. Season with salt and pepper to taste.
- Once peppers are done, fill each pepper with orzo mixture.
- Bake for another 8 minutes to warm stuffing.
- Serve warm with a dollop of greek yogurt and enjoy!
