Everyone loves a traditional salsa. But, I wanted to make one that was fresh and summer’y. Pineapple is a perfect substitute for tomatoes. Actually, any fruit is perfect for salsa. This one was a hit for Memorial Day weekend. It could be perfect for any holiday this Summer.
For this salsa, I chopped the pineapple into small cubes. Perfect for scooping with your favorite chips. I diced the avocado, red onion and jalapeños. The cilantro gives it a perfect freshness. A little lime juice finishes it all off.
Serve your favorite chips with this pineapple salsa. I love Maya Kaimal naan chips or Garden of Eatin tortilla chips with this salsa. This salsa is also great with tacos, fish, meats or eggs.
- ½ Pineapple (4 cups), cubed
- 1 Avocado, diced
- 1 Jalapeno, thinly chopped
- ½ Red Onion, finely chopped
- 1 Lime, zest and juice
- ¼ cup Cilantro, finely chopped
- Salt & Pepper, to taste
- In a large bowl, combine pineapple, jalapeno, red onion, lime zest and juice, cilantro, and a pinch of salt and pepper. Mix until combined.
- Add avocado and gently stir.
- Serve with your favorite chips.
