Taco night is my favorite night!!! But in our house, we don’t just eat tacos on Tuesdays! I’ve got you covered for Meatless Monday’s and Taco Tuesday’s with this recipe…or any other night of the week!
These Roasted Cauliflower Tacos with Red Cabbage Slaw are to die for! The slaw ties it all together…crunchy and fresh! These tacos are so easy to make, too! Roast the cauli, make the slaw, put it all in a taco with some toppings and they are ready to eat!
Chop the cauli into small florets. Toss with with olive oil, chili powder, cayenne pepper, cumin, paprika and salt and pepper. Roast for 30 minutes in a 400 degree oven. These make a great snack too!
Ingredients needed:
3 cups cauliflower, chopped
2 tablespoons olive oil
1 tablespoon chili powder
1/2 tablespoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
Pinch of salt and pepper
1 cup black beans
1/2 cup feta cheese
taco shells/tortillas
Red Cabbage Slaw:
3 cups red cabbage, thinly sliced
1 tablespoon apple cider vinegar
1 tablespoon honey
Juice of 1/2 lime
2 tablespoons cilantro, chopped
Pinch of salt and pepper
Preheat the oven to 400 degrees. In a large bowl, combine cauliflower with olive oil, chili powder, paprika, cayenne pepper, cumin and salt and pepper.
Transfer to a baking sheet lined with parchment paper. Roast for about 30 minutes until golden brown. In a large glass bowl, combine red cabbage with apple cider vinegar, honey, lime juice, cilantro and salt and pepper. Refrigerate until ready to serve.
Start by assembling the tacos with cauliflower, black beans and avocado slices. Then top with red cabbage slaw. Sprinkle with feta cheese and a squeeze of lime. Serve with your favorite salsa or hot sauce and enjoy!
