This is what weekend breakfasts are made of! Warm, silky, comforting! Warm Chia Seed and Oat Pudding topped with blueberries and almonds!
Start by warming almond milk and pure maple syrup in a small sauce pot over medium to low heat, about 5 minutes. I love using my le creuset small saucepan! It distributes the heat perfectly.
Add chia seeds and cook for another 5 minutes. Add quick oats and continue to cook on low heat for about 10 minutes. Add more almond milk to your liking.
Transfer to a bowl and top with blueberries and sliced almonds. I like to add more maple syrup too!

Ingredients
- 2 cups almond milk
- 1 tablespoon pure maple syrup
- 2 tablespoons chia seeds
- ½ cup quick oats
- Handful of blueberries
- Handful of sliced almonds, toasted
Instructions
- Warm almond milk and maple syrup in a small sauce pot on medium to low heat, about 5 minutes.
- Add chia seeds and cook for another 5 minutes.
- Add quick oats and continue to cook on low heat with the pot top on for about 10 minutes. Stir occasionally.
- Transfer to a bowl and top with blueberries, almonds and extra maple syrup.
